Soul Cycle

Last night I attended a class at Soul Cycle (just opened in Chicago!) with other Windy City Bloggers. I was excited to see SusieLaurenErin, and Erica. It is always so fun seeing these girls! Even though we don’t get together often, it seems like we all know what is going on in each others lives because of our blogs and can pick up right where we left off.

Now time for a recipe! It has been awhile.

A few weeks ago I make an unexpected stop into Protein Bowl for dinner. The unexpected part is a longgggg story, so I will make it brief…..

A local prepared meal delivery service reached out to me to try their new menu. I gladly accepted because I knew I would not have time that weekend to meal prep for the following week, so it was perfect timing. Long story short I brought one of the salads into work to enjoy for dinner before school at night. An hour before I was going to enjoy my salad I received an email from the company telling me to dispose of the salad because the shrimp in the salad were not cooked.

How do you forget to cook something and put it into a salad? Still blows my mind. But I digress. I needed a quick fix. I am not a huge fan of eating out, hence why I prepare most, if not all, my meals during the week.

So I stopped into Protein Bowl and ordered the Spinach & Pesto bowl. The price tag killed me when I knew I could make this at home for an eighth of the price. But I digress. It was still yummy! And since then I have made the recipe AT HOME quite a bit!

 

Spinach & Pesto Protein Bowl

 

If you have been reading LSR for a bit of time you know I am all about the simple, quick, healthy, and single portion recipes. If you are the same way, this recipe will be right up your alley. I also like it because I can make a big batch of it on Sunday and portion it out into tupperware so it is easy to grab throughout the week.

Spinach & Pesto Copy Cat Protein Bowl Recipe

Serves: 1
Ingredients
  • Handful of fresh spinach (1 to 2 Cups)
  • ¼ Cup Cooked Quinoa
  • ½ Cup Shredded Chicken
  • 1 TBSP Feta
  • 1 TSP Trader Joe's Pesto
Instructions
  1. Cook quinoa as instructed on package
  2. Place all ingredients in a microwave safe bowl.
  3. Heat up for 1 to 2 minutes – Spinach will wilt down and pesto with slightly melt.
  4. Mix all together, and Enjoy!
