Happy Tuesday! Is anyone else ready to get back to their normal routine after the holiday weekend? I know I am. Even though I was traveling for work over the holiday, not being tempted by BBQ’s, it was still tough to stick to clean eating. Lets just say I am ready to be back into a routine.

Remember that one weekend that I came up with a few great recipes?! No? Weird. Well today I present the second one I came up with – Strawberry Cheesecake Smoothie.

Better yet – a healthy Strawberry Cheesecake Smoothie. One I will definitely be “treating” myself too now that I am back into my normal routine.

I love cheesecake but rarely find the opportunity to rationalize a thick slice of cheesecake. Who am I kidding I can rationalize anything.

That is why last week my first night in the hotel I ordered room service and got cheesecake (told you clean eating was tough on the road ha). I was a little disappointed with the size but it was still cheesecake.

This recipe I have for you today needs no rationalization. It is protein packed deliciousness.

So what’s the secret you may ask? Cottage cheese. Yes cottage cheese. This ingredient has been my jam lately. Either as a snack, on top of salads, and now incorporating it into my smoothies.

The cottage cheese is what gives it that creamy cheese flavor you would expect from a slice of cheesecake, without the guilt.

I should call out that the garnishes in the pictures above are shredded coconut and cashews. When I sent a picture to my friend with the caption – how do you feel about cheesecake? He automatically assumed the white things were shredded cheese. Nope! I didn’t go that far.

Ingredients
  • ½ Cup Small Curd Cottage Cheese (Full Fat)
  • ½ Cup Frozen Chopped Strawberries (Freeze fresh ones)
  • ½ Banana
  • ¼ Cup Cashews
  • 1 Pitted Medjol Date
  • 1 TSP Vanilla Extract
  • 2 TBSP Water
  • Optional Toppings: Shredded Coconut, Chopped Cashews
Instructions
  1. Combine all ingredients into a blender.
  2. Top with the toppings of your choice. Enjoy!

I have a sneaky feeling that cottage cheese will be making its way into many more of my smoothies in the near future.
