I have been ready for the weekend since 6 a.m. Monday morning! Anyone else?! I am happy to say we have made it to hump day…

I haven’t posted a recipe in foreverrrrrr. Maybe it is because I haven’t been blogging regularly in forever. My last recipe post was the Strawberry Cheesecake Smoothie, which by the way I am still loving and making different variations of it. Don’t worry, even though I haven’t posted a recipe in awhile does not mean I haven’t been cooking. A few weeks ago I teased you in a weekend recap about an easy easy recipe I put together. So without further ado here it is. Get some pen and paper – this is a tough one.

Mediterranean Chicken Ingredients (Amount Based on Servings)

  • Raw Chicken Breasts
  • Capers
  • Sun Dried Tomatoes in Olive Oil
  • Capers

All ingredients can be purchased at Trader Joe’s. Shocker, I know!

 

Place the chicken breasts in the bottom of a baking dish. Next  layer the artichoke hearts (cut in half if not already cut), sun dried tomatoes sans oil, and capers. Drizzle a little of the sun dried tomato olive oil and caper juice on top. Bake for 35 minutes at 350 degrees.   After 35 minutes pull out of the oven to enjoy! If you want the artichokes and sun dried tomatoes a little crispier – place it under the broiler for a minute or two. Serve chicken over steamed spinach! And enjoy.
