Happy Monday! More appropriately Happy Meatless Monday! Anyone who stopped by yesterday knows that I have a recipe to share today. But first the weekend….

Yep! I don’t have much to share. And that is just ok with me. My weeks have been so busy – leaving at 6 a.m. getting home at 10 p.m. – I welcomed the less than busy weekend. I got a lot done too! Which is always a great feeling going into the week.

Because I had a few extra minutes on my schedule this weekend I was able to come up with two new recipes. Both are on the sweeter side, but 100% healthified. I am going to save one of the recipes for a rainy day (just think cheesecake). Today is all about chocolate….

Chocolate Silk Overnight Night Oats Recipe

A breakfast recipe that tastes like a sin because it is sooooo good. Anyone who loves chocolate would not mind waking up to this in their refrigerator.

Serves: 1
Ingredients
  • ½ Cup Old Fashioned Oats
  • ⅓ Cup Chocolate Shakeology or other Chocolate Protein Powder
  • 1 TSP Chia Seeds
  • ½ Cup Original Almond Milk
  • Sunflower Seeds (Optional Topping)
Instructions
  1. Combine all ingredients in a mason jar and shake.
  2. Place in the refrigerator for at least 4 hours or overnight.
  3. Top with seeds/nuts of your choice for an extra crunch!

I can’t stop thinking about this breakfast. I have always liked my overnight oats best sans greek yogurt. I know a lot of people like this addition but for some reason I do not. Which is funny because I love greek yogurt by itself, but I don’t like it in my oats or smoothies. To each his own! Feel free to cut down the almond milk to 1/4 cup and add a 1/4 cup greek yogurt.

I know I mentioned last week but I am back to drinking/incorporating Shakeology (<-coach link) everyday. I started last Thursday and have been loving all the combos I have come up with. You will definitely see many more chocolate recipes on LSR since this is back in my life. I also love how much better I feel since drinking it again.

 

Even though it was a rainy Saturday here in Chicago, nothing was going to rain on my parade when I pulled these chocolate oats out of the fridge to enjoy for breakfast!

    Chocolate everything….vanilla ice cream. I know it does not make sense.
